Can’t. Breathe.

So I’m starting to get settled in my new home in Hartford, CT. The new job is keeping my busy busy so the old days of reading blogs 2 hours a day and writing my own too are becoming memories, but I still try to find time to make it around the sphere and see what everyone else is doing. It’s so much easier to devote time to reading blogs on someone else’s time! When I get home at night, after writing articles, making promotional flyers, and researching products all day the one thing I want to do is make a bunch of fabulous food for myself then walk around my new all-by-myself studio adjusting furnishings.

But back to my heavy breathing…. I‘m trying out gyms in my new area and I went to my first-ever spinning class today! Woah! I so didn’t pace myself in the beginning and now deep breath turn into a spastic cough. Luckily, the gym I’m testing out also has yoga 7 days a week. So I think that’s where I’ll be tomorrow.

It hasn’t yet hit me that I’m in a new city and know almost no one. But I do know that if I keep walking around the apartment adjusting vases, eventually I’ll go crazy. So I’m starting to make an effort to get out there. Last night I went to a Gluten-Free cooking demonstration with Terry Walters, the author of Clean Food. I have her cookbook, so of course I brought it and had it signed!

She really knows her stuff and I’m excited to try her recipes at home. You should check out here on-sale book here, and aim for free shipping too!
And I know I’ve promised apartment pictures but I want to wait until it’s all done–so about another week. But know that until then I’ve been enjoying living alone and have been eating some great stuff!
Micro Greens, purple pepper, hummus.
Kale, Sundried Tahini Dressing, Beans, Sprouted Bread.
 
Kale and Micro greens, more Sundried Tahini Dressing, Raw Falafel (recipe soon!)
Green Pumpkin Smoothie: pumpkin, spinach, cinnamon, flax, water, almond mylk, stevia.
Roasted Yellow carrots with a miso glaze over
 sauteed kale and sundried tomatoes, microgreens, tomatoes.

How do you want Raw Monday to continue, do you want to see all day raw eats or one cool raw recipe?  I know some people are really curious about how the whole raw lifestyle works, which is why I like to show a full days worth or raw meals, but others just want to see one impressive meal. What about you?


Ever tried yellow carrots? This was my first time, not quite as sweet, but fun to use!


How long does it take for you to get settled in a new home, have things unpacked and in places you want them and to start feeling like it’s coming together? I feel like i’ve done nothing but, but Im STILL sleeping on a mattress on the floor with big empty boxes!

    I hope that being busy busy in the new job is a good thing at least. Loving the pics of your eats. Yum. It's been a long time since I've moved and had to get settled.

    Spinning can be a real bitch. I always find it hard, even when I'm not really giving it 100%.

    I'm still eating leftovers from Thanksgiving this week! They should last me until at least Friday.

    I can't wait to read that raw falafel recipe.

    Transitions are always rough. I moved to Phoenix a year and a half ago and part of me feels like I never REALLY got settled here. But, I know that my heart wasn't really into it, so part of that is my fault. Hopefully things will go better in PA!
