Hello errrverybody!
How are your weeks going? I’m really enjoying the new job. I’m learning about all of the projects around the office and the country; I’m a little intimidated but I know that’s better than being bored!
Today the office took me out to eat which was really nice. They did ask me if I was a vegetarian, but I gave a “kinda” answer and moved the conversation along. But my boss is a vegetarian so maybe it will be a bonding experience!
Monday night I made a big batch of hummus to use for sandwiches and dipping this week. My good friend, an over-seasoned/over-salted hummus addict, said this was his favorite of my homemade hummuses yet.
I made it with “a little bit of this, little bit of that” but the result is super flavorful!
Ginger Hummus:
3 Tbs tahini
2 tsp Cumin
1 inch chopped ginger
2 garlic cloves
1/4 tsp tumeric
Juice from 1 lemon
salt to taste
water for right consistency
Blend all ingredients Together.
This is a little wild but it’s crazy flavorful and has a solid kick from the ginger and garlic. Definitely impresses my friends!
Are you starting anything new in your life this month? Summer is usually a great time to begin new goals. I’m going to make some goals for myself once I get settled in my summer routine. What about you??
Enjoy the remainder of your weeks! Keep living beautifully and with a purpose! I’ll check back in tomorrow
