This is a slight twist on the original mozzarella Caprese salad… with roasted peppers and added herbs. Enjoy! 

Herbal Caprese Salad

Ingredients
  • 1 ball of fresh mozzarella
  • 1 roasted red bell pepper
  • 1/8 cup chopped parsley
  • 1/8 cup chopped basil
  • 1/10 cup chopped chives
  • 2 Tbs olive oil
  • 1 Tbs lemon juice
  • salt and pepper to taste
Instructions
  1. Cube mozzarella and bell pepper into bite size pieces
  2. Finely chop herbs
  3. Dress with oil, lemon, salt and pepper and combine lightly.
