- 1 ball of fresh mozzarella
- 1 roasted red bell pepper
- 1/8 cup chopped parsley
- 1/8 cup chopped basil
- 1/10 cup chopped chives
- 2 Tbs olive oil
- 1 Tbs lemon juice
- salt and pepper to taste
- Cube mozzarella and bell pepper into bite size pieces
- Finely chop herbs
- Dress with oil, lemon, salt and pepper and combine lightly.
