Raw Breakfast Buckwheat Bar

Hey gang!

As I mentioned when I made Spirulina Bars, my busy schedule nowadays means I’ll be making bulk bar recipes on the weekends in order to have quick snacks that are loaded with good stuff.

And while I love bars like “Larabars,” I don’t find them to be really “nutritious.” Sure, they’re healthy and are made with all natural vegan and raw ingredients, but there’s not a whole bunch of substance in them. So I’m hunting for “powerbars” not just snackbars. I’ve been meaning to make my Pumpkinseed Powerbars again. But I’ve been busy making new things!

As with this weekend, when I created a Blueberry Breakfast bar that keeps me full until lunch and is just sweet enough. Plus the blueberry flavor screams breakfast to me!

Breakfast Buckwheat Bar: (10 bars)
2 cups sprouted buckwheat
1 cup blueberries (frozen is good)
1/4+ cup maple syrup
1/4 cup almond butter
1/4 cup cacao powder
1/8 cup maca powder
1/2 cup goji berries
1 tsp salt
I sprouted my buckwheat like I do any grain: Soaked over night, then strained in a mesh strainer spread out for 8 hours, rinsed, strained again for 8 hours, and repeated until you see sprouts. Click the image for a detailed look. 
Puree blueberries with maple syrup.
Combine with all other ingredients. 
Spread on cookie sheet and freeze until hardened to make them easy to handle. Then cut into 10 rectangles.
Dehydrate for 16-20 hours at 95 degrees.
Line them up and take pictures. Enjoy!
DO you see how dark the bars get in the dehydrator? They almost look chocolately–might be a good selling point for a kid or picky friend. And as with most raw treats, this can also be cooked in the over at the lowest temperature for a couple hours if you don’t have a dehydrator

Are you a fan of buckwheat? Or what’s your other favorite whole grain? I’ve only used buckwheat in bars and once in a pilaf–which I thought was too dense in. Grains are high in calories so I’m usually conscious of having just a serving, which can be hard, so I like this grain in this perfectly-portioned bar!

    So weird!! I just had buckwheat for the first time today! I know it's silly, but I've always been nervous about the "wheat" in the name even though I'm aware the grain is gluten free. Today I decided to throw caution to the wind and buy some raw buckwheat granola from Kaia. Yummmmmmm. I'll definitely be sprouting and making my own soon! On Father's Day I made some blueberry bars from Alissa Cohen's book for my boyfriend's dad – they were amaaazing, so I really can't wait to try these… especially with my new-found love for sprouted buckwheat ;)

    These DO look chocolatey- I bet I could trick even my brother into eating one! The only whole grain I've really experimented with is quinoa, and I love it!

    Man, I just made larabars too (cue sad tombone -wah wah wah)

    I don't have a dehydrator and my oven doesn't go lower than 200. I wonder if I could bake these like normal, what do you think? i know they wouldn't be raw but I haven't really gotten on the raw bandwagon yet anyway.

    wah-wah. no. you're bars sounds totally delicious. Love the rosemary in them.

    I would definitely make them in the oven. Maybe at 200 for 2 hours or so? I'd keep a watch on them and pull them out and test every once in a while…but I'm a huge fan of periodically checking recipes before they're done. ;)

    the only thing i have had with buckwheat is buckwheat pancakes. oh they were so good!
