Raw Goji Walnut Cookies –Made with Leftover Almond Pulp!

You guys never got to see my Raw Monday Post this week, due to internet and picture uploading issues. But have no fear! The best part of Raw Monday this week was in these cookies!
I’m always on the lookout for things to do with almond pulp after making mylk, almonds can get pricey and I dont want to throw them away! So this week I made some cookies.
These are fabulous. I have to say, they’re much better than the cookies I made last time from the pulp–yet they’re simpler! The best part is you can load them up with Superfood supplements and enjoy your cookie, not only guilt-free, but feeling GREAT about it!
Goji Walnut Cookies: (20-25 cookies)
Almond pulp (or almond flour) from 1 cup almonds
1/2 cup chopped walnuts
1/2 cup maple syrup
3 Tbs Chia seeds, a superfood
After making homemade almond mylk, save the leftover almond pulp. Combine all ingredients and scoop gently onto dehydrator sheets. Dehydrate for about 24 hours.
