Happy Friday! It’s Thursday at 11pm so I think I can say that… I’ve had an awesome week and it feels great to come to you tonight with a super tasty, ultra healthy, well-rounded recipe that has fun complimenting flavors.
Eggplant   for Folate, Potassium, Manganese, Vitamin C, Vitamin K, Copper, Magnesium, and Phosphorus.

The sea vegetable dulse has calcium potassium, magnesium, iron, iodine, manganese, copper, chromium, zinc, and vitamins A, B1, B2, B3, B6, B12, C and E.

Favebeans offer 13g of protein and a wealth of other vitamins. Ginger is an amazing anti-inflamatory and is great for respitory health and cancer prevention. And nama shoyu offers a great fermented soy offering maximum benefit.

Sea Vegetable Eggplant with Favabeans: (serves 1 large portion)
1 small eggplant or ½ larger eggplant
½ cup shelled favabeans
¾ cup vegetable broth
1 Tbs nama shoyu (or other fermented soy sauce)
2 Tbs chopped dulse
2 cloves chopped garlic
1 tsp chopped ginger
Soak chopped eggplant in salt water bath for one hour. Drain and rinse. Put vegetable broth, garlic, and ginger in saute pan until sizzling. Add in eggplant and cook until tender, about 3 minutes. Add in dulse, nama shoyu and favabeans and continue sautéing until beans are tender, about 5-8 minutes.
I served my sauté next to a slice of freshly baked organic sprouted bread for lunch today and I was satisfied and full until dinner.
I’m without a doubt making this again. It was great power food and all of the flavors played off each other so nicely. Even though I’m not a huge ginger fan, I loved the hint of ginger against the garlic and the salitness of the dulse and nama shoyu. It also has great flavor and, I think, looks and tastes way more complicated than it actually is.
Today I also made a really refreshing mint-cucumber water. It was 95 degrees here in Washington and brutal! I think this drink will be essential Memorial Day weekend to cool off with during the hours outside. 
Chopped mint, chopped cucumber, 2 drops of stevia (or some sugar, or none) shaken and poured. So refreshing!
