A month or so ago I wondered what I would post about on my birthday. I’m a big birthday celebrator and felt strongly about having some sort of theme… well how about cake?

As I write this, the cake isn’t actually made as my birthday doesn’t start for another 3 or so hours and cake won’t be happening for quite some more hours after that. But, lucky me, I’ll be far away from a computer when the cake is actually assembled and devoured–surrounded by my closest DC friends that I’ve invited over for one of my beloved “Vegan Dinner with Friends” where I’ll make some fabulous eats and share the food I believe in with the people I enjoy most.

Combine that dinner party and the sunning, wining, and dining I’ll be doing and it’s going to be a fabulous weekend.

But back to the cake.
I wasn’t about to serve my guests their first-ever raw food experience (excluding salad etc. more like their first purposefully raw, “replacement” raw food) without testing some recipes first. So that is what I’ll share with you today, and I’ll be sure to add a completed photo once the cake is assembled. I’ve already made the crust, and I’ve experimented with filling. So let’s get drooling.

I guess technically it’s a pie, since there is a crust and filling. But it’s a chocolate pic. A chocolate mouse pie cake hugged by a banana chip mixed nut crust. Oh. Boy.

The Crust:
1 cup dates
1/2 cup raw banana chips
1/2 cup raw almonds
1/2 cup raw pecans
1/2 cup raw almonds
Process the nuts first in a food processor or Vitamix until powdered. Add in the dates, perhaps slowly or in batches depending on your machine, until dough is formed.

The Filling:
3 ripe avocados
3/4 cup maple syrup
1/2 cup raw cacao powder
1/2 tsp salt
Blend in Vitamix/blender until moose-like.



For Cake:
Spread crust on bottom of pie pan, fill with moose. Garnish and serve. 

Goddamn Fabulous.

    Happy birthday!! I hope you're enjoying your special day :) This cake looks to die for- I used to be apprehensive about avocadoes in chocolate mousse, but after I tried it, I'm sold!
